Easy Pan Fried Brinjal (Eggplant)

Brinjal fry (Eggplant fry) is a very simple yet tasty recipe, which goes well with many dishes. Brinjal fry with the winter season's brinjals are generally more delicious, but it can be made all year round.


So, let us see a very easy recipe for making brinjal fry.



Ingredients

  • Brinjal (Eggplant) - 250 grams
  • Mustard Oil - 50 to 100 ml
  • Salt - ¼ teaspoon
  • Turmeric powder - ¼ teaspoon
  • Dried Chilli Powder - ¼ teaspoon
  • Sugar - ¼ teaspoon

Recipe

  1. Take brinjal (eggplant) weighing about 250g, wash it well, and cut it into round slices.
  2. Marinate the brinjal slices with ¼ teaspoon of salt, an equal amount of sugar, chilli powder, and turmeric powder each. Mix well.
  3. Rest the marinated brinjal slices for 10 to 15 minutes.
  4. Heat mustard oil in a frying pan.
  5. Fry the marinated brinjal slices from both sides in the oil on medium heat for approximately one minute each (depending upon the depth of the slices).
  6. Take out the fried brinjal slices on a plate and serve hot with puri, roti, parathas, or rice.
